Hariyali Pav Bhaji: A healthy twist

A healthy twist is given to the traditional Pav Bhaji. Hariyali Pav Bhaji tastes yum! So, if you are bored eating regular Pav Bhaji then try this Hariyali Pav Bhaji and give a new taste to your taste buds.

Ingredients:
  • 1/2 cup Whole green gram
  • 1/2 cup spinach leaves (palak), boiled and chopped
  • 3 tablespoons boiled Fenugreek leaves (methi) 
  • 1/2 chopped green capsicum
  • 1/4 cup shelled green peas
  • 4 medium green tomatoes pureed 
  • 1/2 cup grated cauliflower 
  • 1 potato boiled, peeled and grated 
  • 1-2 tablespoons oil 
  • 3 tablespoons butter
  • 2 tablespoons ginger-garlic paste 
  • 1 tablespoon green chili paste 
  • 1 medium onion finely chopped 
  • 2 tablespoons Pav bhaji masala 
  • Salt to taste
  • Finely chopped coriander leaves and butter for garnishing
  • Few drops of lemon

Making of Hariyali Pav Bhaji:

1. Heat oil and butter in a pan on a low flame. Meanwhile, take a grinder and add spinach, fenugreek leaves, and water. Grind into a fine paste and keep it aside.

2. Now saute ginger-garlic paste for about a minute. Then add green chili paste and saute for 2 minutes. Now, add onions and saute for 3-4 minutes. Then, add capsicum, green peas, and cauliflower. Mix well and let it cook for about 5 minutes. Coarsely mash the veggies.

3. Now add pureed tomatoes and let it cook for 3-4 minutes. Then add the ground paste, Pav Bhaji masala and mix properly. Add salt as per the taste. Mix and then cover the pan and let it cook for 8-10 minutes. Keep stirring at regular intervals.

4. Add potato and moong and mix well. Again add 1/2 cup water and mix well. Let it cook for another 1 to 2 minutes and then switch off the gas. Garnish it with finely chopped coriander leaves and butter. 

5. Delicious Hariyali Pav Bhaji is ready. Serve hot along with the Pav and enjoy eating.
